Bounties

In RDR I the bounty hunting side mission requires you to find a wanted poster and deliver the outlaw, dead or alive, to the nearest prison for monetary rewards. You can find Wanted Posters placed on walls near Train Stations and Prisons inside a settlement by a Marshall. There are 45 bounties total, but you only need to find at least 1 bounty in all 20 possible locations they could spawn in for 100% Completion. You can track the number of bounty locations you have completed under Stats > Score in the Pause Menu.

In RDR I you can participate in horse breaking and nightwatch jobs for monetary rewards. The Horsebreaking side mission requires you to break a horse inside a corral and return it to the rancher. The Nightwatch Job side mission requires you to protect a settlement from rustlers and bandits while on night patrol with a watchdog. Outfits

In RDR I you can wear 18 different outfits to change John and Jack's style at a camp or safehouse. Some outfits are awarded for completing missions, while other outfits must be earned. Once an outfit is unlocked, you have to find and collect different outfit scraps for that outfit by completing various jobs and minigames (Which is why you want to have all the Missions and Events and Minigames completed beforehand!). Although there are 18 outfits total, you only need to earn 9 specific outfits for 100% Completion. These outfits are marked with a colored bar on the left. You can track how many outfits you have discovered and completed via Stats > Misc in the pause menu.

SAVE TOWNS

In Undead Nightmare there are 23 settlements between West Elizabeth, New Austin and Nuevo Paraiso, 20 of which have to be saved from hordes of the undead. You will unlock more towns to save as you explore new territories on the map. Saving all 20 settlements at least once is needed for 100% Completion. It is recommended to save towns as early as you can throughout the story of Undead Nightmare for mostly ammo rewards and new weapons for survival.

MISSING PERSONS

In Undead Nightmare there are 16 missing persons to find, save and bring to a safe zone (kind of similar in concept to Single Player's Bounty hunting side mission). You can find Missing Persons Posters placed on walls inside Fort Mercer in New Austin and El Presidio in Nuevo Paraiso after Story Mission "A Cure For What Ails You". There are 16 missing persons total, and you need to find and rescue all of them for 100% Completion.

In Undead Nightmare, similar to Single Player, you can complete different undead ambient challenges to help earn rewards and become a legend of the apocalypse. Different Challenges each have 5 ranks to complete. Completing all 4 Undead Challenges and the Horses of the Apocalypse is required for 100% completion.

UNICORN

In Undead Nightmare, after reaching Rank 5 in all of the Undead Hunter Challenges and the Four Horses of the Apocalypse Challenges, you can find a Mytical Creature around Torquemada. There is a Unicorn roaming about with rainbow highlights at the tail that you can break and own. Finding and breaking the Mythical Unicorn is needed for 100% Completion.

Outfits

In Undead Nightmare you can wear 11 different outfits to change John's style at a safehouse in a saved town. Some outfits are given automatically or awarded for completing missions, while other outfits must be earned. You can earn outfits by finding and collecting different outfit scraps for that outfit by completing various jobs. Although there are 10 outfits total, you only need to earn 1 specific outfit for 100% Completion (funnily enough, you will naturally earn this outfit as you go towards 100% Completion). This outfit is marked with a colored bar on the left. You can track how many outfits you have discovered and completed via Stats > Misc in the pause menu.

1	Cowboy Outfit This is Marston's typical bounty hunter clothing.
2	Mexican Poncho A musty old poncho. A souvenir of your travels in Mexico.
3	Duster Coat A worn-out old duster. The coat protects your clothing from trail dust, but not much else.
4	Rancher Clothing This is Marston's typical clothing when tending the ranch at Beecher's Hope.
5	US Army Uniform Look like an enlisted man while wearing this uniform.
6	Undead Hunter A master undead hunter outfit - comes equipped with a relic that replenishes ammunition and items.
7	Legend of the Apocalypse As a Legend of the Apocalypse, your phosphorus treatment lasts longer.
8	Union Suit A one-piece long underwear, generally made from flannel. Comes equipped with a button-up front, and a buttoned access hatch in the back for midnight runs to the outhouse.
